Barista

This role is for you if you are deeply passionate about coffee and tea sourcing, processing, and brewing. You know the mechanics of an espresso machine, what makes a good shot, and how to properly steam milk. Matcha is not an afterthought to you. This individual will be working closely with our Head of Coffee on prep/execution of Fri-Sun services, ordering/inventory, and cleaning/maintenance. There will be ample opportunities for continued, deepened education, with field trips, workshops, and trainings with our producers and vendors.

At Nice Dream, you will learn every aspect of working in a busy kitchen, and there are ample opportunities for cross-training if you are interested in learning more about pastry, cocktails, and/or the savory culinary program.

Responsibilities will include:

  • Prepare for and execute Friday-Sunday coffee and matcha service, including dialing in espresso, whisking matcha, preparing syrups or components as needed, and maintaining smooth service flow

  • Clean, maintain, and care for the espresso machine, grinder(s), and matcha tools daily, including regular backflushing and end-of-service cleaning

  • Load, wash, dry, and restock glassware and cups throughout service to keep stations organized and fully stocked

  • Connect finished drinks with customers in a clear, calm, and welcoming way, maintaining high standards of hospitality and attention to detail

  • Maintain a clean, organized barista station during service, resetting as needed to support efficiency and consistency

  • Assist with inventory tracking and ordering for coffee, matcha, service items, and retail products

  • Support breakdown and post-service cleaning, inventory, and restocking to leave the space ready for the next shift

You will be best set up for success if:

  • You have 1–2 years of experience working as a barista in a professional setting

Pastry Cook

We are looking for a baker to join our growing team. Our pastry team ensures that Nice Dream is stocked with vienoisserie Friday-Sunday, while our wholesale partners are stocked with breads, cakes, and muffins seamlessly throughout the week. 

We prioritize the sourcing of beautiful, local, high-quality ingredients, treated with the utmost care and lightest touch. Less is always more: if something can be expressed with less work and fewer ingredients, we’ll take that path. Simple food done really, elegantly well is our M.O..

As part of the pastry team, you’ll prepare croissant dough, high-hydration bread doughs, cake batters, cookie doughs, and ice cream base. You will assist with ordering, inventory forecasting, stock rotation, labeling, and maintaining the pastry case. And, most importantly: you’ll be helping to keep our space and appliances clean and well-maintained. You will work with the team to enforce a high standard of hygiene and sanitation, and ensure that all food safety standards are adhered to.

Responsibilities will include:

  • Preparing doughs and batters for weekly direct-to-consumer and wholesale production, including laminated dough, bread dough, cakes, cookies, and ice cream base

  • Shaping, baking, finishing, and packing pastries and breads with consistency and care

  • Preparing and churning ice cream base in alignment with quality and food safety standards

  • Supporting ordering, inventory, stock rotation, and kitchen organization

  • Maintaining and cleaning equipment and workspaces throughout the day, including end-of-day breakdown and deep cleaning

  • Upholding high standards of hygiene, sanitation, and overall kitchen excellence

  • Assisting with customer-facing needs as required, contributing to a thoughtful guest experience

Line/Prep Cook

We’re seeking to welcome 1-2 passionate cooks that will help us nurture the living, breathing organism that is the culinary program at Nice Dream. 

This role is well-suited for you if you don’t believe there are savory cooks and then there are pastry cooks; are motivated by the pursuit of high standards in quality, cleanliness, and hospitality; understand that consistency is what allows great food to shine; and — above all things — if you really, deeply love food — creating it, consuming it, talking about it, all of it.

This individual will be responsible for the "building blocks" upon which our food program is built. You will work closely with the Head Chef on a non-service day to properly prepare/stock the kitchen for Fri-Sun service. On a service day, you will be working closely with the Head Chef to execute a smooth, excellent, delicious (!) lunch service, conducting inventory, jumping into the dish pit, assisting with a thorough breakdown, and prepping as needed for the next day.

Responsibilities will include:

  • Prepare components for Friday–Sunday lunch service, including fillings, sauces and dressings, marinades, and other foundational prep items

  • Receive, wash, break down, and store vegetables and fish with attention to quality, yield, and proper handling

  • Follow recipes and prep standards carefully to ensure consistency, balance, and repeatability across services

  • Maintain a clean, organized prep kitchen throughout the day, including ongoing dishwashing, station resets, and end-of-day deep cleaning

  • Support inventory tracking by labeling, dating, rotating, and communicating low or missing items to the team

  • Assist with breakdown and proper storage of prep items to set the next service or prep day up for success

  • Contribute to smooth, high-quality execution of lunch service by staying ahead of prep needs, responding calmly to changes, and supporting the line as needed

  • Uphold high standards for cleanliness, food safety, and care at all times, understanding that great service starts well before guests arrive

Counter: AM (7A-2P) or PM (4-11P)

As the first face that visitors encounter at Nice Dream, you will have a significant impact in shaping the customer's experience. You will be responsible for taking orders, serving pastries, scooping ice cream, pouring beer/wine, and assisting the barista (preparing pitchers with milk and cups with ice, connecting orders with customers) as needed. This individual's main priority is ensuring all customers not only have an excellent experience with what they've ordered, but that they feel welcomed, seen, and taken care of.

Responsibilities will include:

  • Welcome guests into the Nice Dream space with warmth, ease, and attentiveness, helping set the tone for their visit from the moment they arrive

  • Setting up the counter (general sweep of space, loading the pastry case, preparing the ice cream case, loading the milk fridge, stocking dine-in cups, dinnerware, flatware, and take-out disposables)

  • Take customer orders clearly and accurately, guiding guests through the menu when helpful and answering questions with confidence and assurance

  • Bag and plate pastries with attention to presentation

  • Scoop ice cream, hand off pre-packed pints, and maintain a clean, inviting ice cream station throughout service

  • Pour non-espresso beverages and assist with drink service as needed

  • Support barista during service to keep service flowing smoothly 

  • Assist with breakdown, restocking, and a thorough final sweep and clean at the end of the day, leaving the space ready for the next service

  • You have 1-2 years retail, FOH, and/or BOH experience

  • You currently hold, or are able to procure, a San Bernardino County food handlers card

  • Must be available to work weekends as part of the regular schedule

Farmers Market Booth Operator

We are seeking individuals to set up, operate, and break down our weekly Nice Dream JTFM booth. A team of two will be responsible for serving pastries, ice cream, and coffee. This shift is held Saturdays 5am - 2pm.

Simple food done really, elegantly well is our M.O..  As many customers’ first introduction to Nice Dream, this role is a great fit for someone who enjoys welcoming people in, sharing what makes our business special, and helping guests feel connected to our world from the very first interaction.

Responsibilities will include:

  • 5-6:45am loading the van 

  • 7am-8am setting up the booth (canopy, coffee work table, folding tables, handwashing station, service utensils/tools pastries, POS, retail section)

  • 8am-1pm operating the booth

    • taking orders

    • making drinks

    • Bagging pastries

    • scooping ice cream; handing off pre-packed pints

  • 1-2pm breakdown of the booth and loadout into shop
